Field-to-fork cuisine at a 300-year-old inn

Located a hop and a skip from the wide-open sandy west coast, Henne Kirkeby Kro is an exclusively modernised 300-year-old thatched inn that prides itself of offering some of the nation’s top gourmet dining. Having secured The Nordic Prize 2012 as Scandinavia’s Best Restaurant under the culinary leadership of Allan Poulsen (see Strandgaarden in this chapter), Henne Kirkeby Kro is today headed by Paul Cunningham (former executive chef of the now closed Michelin-rated The Paul in Tivoli Gardens, Copenhagen). The heritage inn serves field-to-fork gourmet cuisine made with vegetables from the sandy soil of the restaurant garden and with artisanal local produce.

Paul Cunningham is an Englishman and although his popular cookbooks are mainly available in Danish, his eclectic PAULFOOD title is available in English.
