In this episode, New Scandinavian Cooking visits Skagen (The Skaw) - Denmark's northernmost point. Danish chef Claus Meyer prepares delicious dishes using local produce - especially fish.

Skagen is an international tourist magnet with visitors from all over the world - people who come to see the two oceans meet; to experience world-class works of art and to take in and enjoy the special atmosphere. For more than a century, Skagen has been a favourite holiday destination for famous artists in Denmark, e.g. Hans Christian Andersen, who has stayed at Brøndums hotel. Painters and poets were the first to see the light - literally. Particularly the Skagen Group of painters made the place famous.

In addition to tourism, the fishing industry is one of Skagen's most important businesses. You will especially experience the charm and the special atmosphere by the red converted fish warehouses by the harbour, where the restaurants serve fresh fish.

Events and activities
Experience an extraordinary tour of Skagen Harbour (June-August)

The tour starts early in the morning with a visit to the fish auction where a local fishmonger talks about what takes place at the auction. The tour then continues to Taabbel Fiskeeksport (Fish exports) where you will see herring being processed and hear about the factory. From here, you walk along the harbour to Karstensens shipyard before ending up at fishmonger’s Nibe Hansens Fiskehandel, where you will see the fish that were bought at the auction earlier that morning.

The great fish buffet 19 - 20 July 2008

Every July a great fish buffet is held in the auction hall in Skagen. Eat as much as you can from the great fish buffet including salmon, different kinds of herring, shell shrimps and much more. Tickets are bought at the entrance. www.toppenafdanmark.dk

Local produce

Skagen ham

Previously, when one wanted to enjoy a delicious, smoked ham, it was always the southern skies that came to mind, however, now we suggest you turn north to Skagen and a true masterpiece. The Skagen ham can be prepared with fish.


Fresh fish 

The fresh fish is caught at night and can be bought from the many fishmongers later that same day. There is a wide selection; from plaice, Norway haddock and turbot to lemon sole and shellfish.


Local fish dishes

Fish has always been an important ingredient in the food of Skagen. Fried fish is served with delicious specialities from the moors, e.g. honey-preserved cranberries. More than fresh fish, Skagen also has a tradition for salted and dried fish. Furthermore, during the summer season, there are several Danish chefs who work at the restaurants of Skagen.
