Southern Jutland and Rømø
The Marsh and the Wadden Sea is flat, fertile and rich in bird life with unique cultural and natural areas. This is where the Golden Horns, Denmark's most important gold find, were discovered. In the border region to Germany, you will also find Schackenborg Castle where HRH Prince Joakim lives.
The Wadden Sea stretches from the Danish islands of Fanø and Rømø and the German island Sild which make up the western border to the marsh towns of Højer, Ribe and Esbjerg which provide the eastern border. The Wadden Sea is flooded twice a day by the high tide. The difference of the water level between high and low tide is approximately 2 meters. The Wadden Sea constitutes one of the world's most important areas for migratory birds, and thousands of birds visit the area during the autumn and spring bird migrations. |

Southern Jutland coffee and cakes
The people of South Jutland are well known for their coffee and cake. Some of the reasons for this were that the price on coffee was lowered, and hence became available to everybody, and that the quality of the baking ovens improved. The Jutland afternoon coffee table often consists of at least 20 different kinds of cakes. You can sample the Jutland coffee and cakes on Bov Museum or on selected Sundays at Bovrup Gæstgivergård
Honey cakes
The honey cakes originate from Christiansfeld, and for several centuries, they have been made using an old recipe. You can either enjoy the honey cake where you buy it or take it home with you. |

Local produce
Marsh lamb
The marsh is famous for its delicious lambs bred on open marshland all year round and which live of their mother's milk and special grass crops such as spartina and glasswort. The salty grass gives the lamb meat its characteristic flavour and it is considered a delicacy. You can buy the lambs from farm shops or sample the meat at the local restaurants.
Common brown shrimps
The shrimps are a speciality on Rømø island, and the reddish brown shrimps are considered one of the delicacies of the Wadden Sea. The shrimps are caught outside the Wadden Sea island and is cooked onboard the fishing boat. They are served on a slice of white bread with mayonnaise and a twist of lemon.

Farm shops
There are farm shops dotted all over Southern Jutland where you can buy all kinds of Southern Jutland specialities.
On Elmegaarden you can buy marsh lamb, Hereford beef, homemade sliced meat and sausages. Moreover you can join a tour to see the animals or try the farmstay accommodation.
Krusmølle offers a wide variety of things - a café, a farm shop, a ceramic workshop and candle factory where you can make your own candles. Enjoy a lunch in the café which is based on the principle of "from farm to table" and therefore relies on own produce.

Black Sun During spring and autumn millions of starlings visit the Wadden Sea area. When this happens, you can experience the phenomenon which the people of western Jutland have named Black Sun. Legend has it that in the old days, people believed that the starlings spent the winter at the bottom of the lakes. In autumn, the starlings disappeared as soon as the frost set in, and just as suddenly, they reappeared in spring. Since migration often takes place at night, it was natural to believe that they simply rose from the mire of the lakes.
