New Scandinavian Cooking visits the rocky island of Bornholm and, among other things, Danish chef Claus Meyer grills up herring served with green strawberries, and bakes pancakes with local rape-seed oil.

Bornholm

The island is situated in the middle of the Baltic Sea. It is referred to as the ”Sunshine Island” because the island is one of the locations in Denmark with the most recorded hours of sunshine annually. It is called the the ”Island of Arts” because it is famous for having a flourishing community of artists and craftsmen, and finally, it is referred to as the ”Pearl of the Baltic Sea” due to the combination of artists, sunshine, nature and local produce which all add up to make the island unique. In recent years, Bornholm has become famous for its high-quality local produce, and it is the perfect place if you are on the look-out for culinary delights. Try for example freshly smoked herring from one of the Island’s smokehouses, a gourmet dinner during sunset at an exquisite restaurant, a locally brewed beer or a piece of delicious homemade chocolate. 

Events and activities on Bornholm
Skafferiet Gudhjem Mill 

Here you can taste, smell and obtain information about Bornholm produce. The recently equipped mill now serves as a ”Pantry” (Skafferi) with shop, cafe, and show room where some 90 different products from fields and sea prepared by Bornholm food producers are being sold and presented on the shelves and in the refrigerated display counters. Skafferiet is open daily during season and also functions as ”the tourist office of local food produce”. Read more about events and opening hours here...

Handmade soft toffees at Karamel Kompagniet
Delicious soft toffees are carefully created using recipes from "the good old days" at Denmark's only toffee maker - and handmade of course. In store you can follow the process of toffee making and see how soul is put into every peice. Read more about opening hours here

Lille Gadegård Vineyard

The winery has a cafe, farm shop and 2.9 hectares of wine fields. Lille Gadegård produces redwine, liqueur, sparkling fruit wines, akvavit and the local Bornholm speciality ”Honey Syp”. 

Svaneke Brewery

In 2003, the brewery won ”beer of the year” and it is known nationwide for it’s beers. Stop by and see the 1000 litre copper boiler, where hops, malt and water turns into the valuable liquid. The brewery offers guided tours, beer tasting and a restaurant.

Kjaerstrup Chocolate By Hand

The small chocolate factory is located in the village of Snogebæk. Here, you get the chance to see how the chocolate is prepared by hand and they even let you have a taste. Particularly the hand-made chocolate snowballs are popular. Read more about Kjaerstrup Chocolate  


Boisen Ice Cream Cafe

In Snogebæk, you can enjoy freshly made organic ice cream. Boisen Ice Cream is made from local produce and the fresh milk used for the ice cream originates from the cows on the Bornholm fields.

Lehnsgaard RAPE-SEED KERNEL OIL

Keep an eye out for the cold-pressed rape-seed oil from Lehnsgaard – a 100% Bornholm quality product – organic and spiced varieties are also available. The popularity of rape-seed oil has increased in recent years in the Danish kitchens – both among chefs and in private homes. The oil is sold in the Bornholm’s convenience stores as well as in many specialty shops.
