Fjordenhus, an architectural gem designed by Olafur Eliasson in Vejle, plays home to a new restaurant for gourmet lovers from November.
A new gourmet restaurant, Lyst, opens November 21 in Vejle. Set in the architecturally outstanding Fjordenhus building, the restaurant has interior design by Olafur Eliasson in conjunction with Studio Other Spaces of Berlin, and promises to deliver a "magical, inclusive and sustainable dining experience" with all food sourced from a 100-mile radius.
Headed by chef Daniel McBurnie, formerly of Michelin-starred restaurants AOC and Marchal, the 28-cover restaurant will offer gourmet menus of between 20 and 25 servings with a special emphasis on foraged edibles from local woodlands. The whole experience is rooted in the restaurant's philosophy of tying gastronomy, art, architecture, and environmental responsibility together.
