In the small fishing village of Aarsdale stands a smokehouse that has been part of Bornholm’s history for generations. Back when Aarsdale was the island’s largest smoking town, smoke rose from numerous chimneys along the coastline. Today, Aarsdale Røgeri & Bistro helps keep that history alive – not by standing still, but by continuing to evolve.

During the day, traditional smoked specialities rooted in Bornholm’s smoking heritage are served, while the bistro in the evening makes room for new interpretations and seasonal ingredients. From herring and salmon to more unexpected creations, the flavours of the smokehouse find their way onto the plates, accompanied by views of the Baltic Sea, where the water remains a natural part of the experience.
