Hirtshals Fish Festival and the North Sea Oceanarium are once again hosting the open-faced sandwich competition “Herring of the Year,” where participating restaurants are challenged to create the most unique smørrebrød featuring marinated herring based on traditionally matured herring.
“Herring of the Year” is a tribute to herring as a culinary delicacy – and thereby also a celebration of nature, the sea, and Hirtshals. The event symbolizes the connection between tradition and innovation: the traditionally matured herring remains at the heart, while new flavor possibilities are continually explored.
